Mustard oil is a pungent edible oil valued in South Asian (Indian, Bangladeshi, Nepali) cuisine for its characteristic flavor and preservative properties. Global annual production exceeds 2 million metric tons, with major production in India, Canada, and Nepal.
Huatai's mustard oil production lines deliver complete EPC solutions covering every stage — from seed cleaning and conditioning, through flaking, pre-pressing, and solvent extraction, to refining. Mustard seeds contain 35-45% oil and glucosinolates that require special conditioning to deactivate myrosinase enzymes.

Mustard Oil Production Steps
From raw mustard oil to refined oil — a fully integrated process.
1. Cleaning
Raw mustard seeds pass through magnetic separators, vibrating screens, and destoners to remove foreign materials — stems, dust, stones, and metal fragments.
2. Conditioning
Mustard seeds are conditioned with steam to 60-70°C in a vertical conditioner. Critical heat treatment deactivates myrosinase enzyme, preventing glucosinolate breakdown into pungent allyl isothiocyanate during processing.
3. Flaking
Conditioned mustard seeds are flaked to 0.25-0.30 mm thickness using smooth-roll flaking mills to rupture oil cells for efficient extraction.
4. Cooking
Flakes are cooked in a multi-stage vertical cooker to 80-100°C, adjusting moisture to 4-5% for optimal pressing performance.
5. Pre-Pressing
Cooked flakes are pre-pressed in a continuous screw press to remove 60-70% of the oil, producing press cake for solvent extraction.
6. Solvent Extraction
Pre-pressed cake is extracted with hexane in a continuous chain or loop extractor using counter-current percolation, reducing residual oil in meal below 1.0%.
7. Miscella Evaporation
Miscella is evaporated in two stages and stripped under negative pressure to recover solvent and produce crude mustard oil.
8. Refining
Crude mustard oil is refined through degumming, neutralization, bleaching, and deodorization. For pungent mustard oil, only minimal refining preserves characteristic flavor compounds.
9. Optional: Pungency Adjustment
For markets preferring pungent mustard oil, allyl isothiocyanate can be reintroduced through controlled glucosinolate hydrolysis, producing traditional pungent cooking oil.

Continuous screw pre-press followed by chain-type or loop-type extractor with counter-current hexane percolation, DTDC, and miscella evaporation system.
D.T.D.C. System
Multi-stage desolventizer-toaster-dryer-cooler for mustard meal processing, with controlled toasting to reduce glucosinolates for safe animal feed use.
Refining System
Complete refining line with degumming, neutralization, bleaching, and deodorization. Light refining for pungent oil, full refining for neutral oil.
Optional Pungency System
Controlled glucosinolate hydrolysis for reintroducing pungent allyl isothiocyanate, producing traditional pungent mustard oil for South Asian markets.

Myrosinase Control Technology
